My grandma used to make Angel Pie every Christmas.
Angel Pie – Beat 4 egg whites stiff, add ¼ tsp cream of tartar, beat and slowly add 1 cup sugar. Put in well-buttered 10-inch pie pan and bake for 1 hour at 300 degrees. Cool.
Filling: Beat 4 egg yolks slightly. Add ½ cup sugar, 3 tbsp lemon juice and 3 tsp grated lemon rind. Cook in double boiler until it jells, but not too stiff. Add 2 or 3 tbsp water, if necessary. Beat in ½ pint whipped cream. Spread half over meringue, then a layer of lemon filling, then a layer of the remainder of the whipped cream.)
