• Apple Spice Coffee Cake

    Apple Spice Coffee Cake
    For the Cake
    • 1/2 c. non-dairy milk
    • 3/4 c. unsweetened applesauce
    • 1/4 c. canola or coconut oil
    • 1 t. vanilla extract
    • 1/2 c. organic brown sugar
    • 1 c. whole wheat pastry flour
    • 1 c. oat flour (you can grind your own using old-fashioned oats)
    • 1 1/2 t. baking powder
    • 1/2 t. baking soda
    • 1 t. cinnamon
    • 1/2 t. nutmeg
    • 1/2 t. salt
    • 1 apple, peeled, cored and diced

    For the Streusel Topping

    • 3 T. organic brown sugar
    • 1 T. organic sugar
    • 3 T. whole wheat pastry flour
    • 2 1/2 T. vegan margarine (i.e. Earth Balance)
    • 1/4 c. old-fashioned oats
    • 2 t. cinnamon


    • Preheat oven to 350 degrees.
    • In a small mixing bowl or a liquid measuring cup, combine milk, applesauce, oil, vanilla and brown sugar.
    • In a large bowl, combine flours, baking powder, baking soda, cinnamon, nutmeg and salt.
    • Add wet ingredients to dry and stir until just combined. Add your peeled, cored and diced apple to your batter and fold in gently.
    • Transfer batter to an 8×8 pan that has been lightly greased or coated with cooking spray.
    • In a small bowl, mash together all of streusel topping ingredients until uniform in consistency. Sprinkle topping evenly over the top of the coffee cake.
    • Bake for 28-32 minutes or until a toothpick inserted in the center comes out clean.
