• Baked Ziti

    • 2 Boxes Ziti
    • 1┬áLarge White Onion, thinly sliced
    • 6 Garlic Cloves, smashed and minced
    • 3 T. Oilive Oil
    • 2 Pounds Ground Beef
    • 1/2 tsp Salt
    • 1/2 tsp Pepper
    • 1 Pound Mozzarella, shredded
    • 8 Ounces┬áProvolone Cheese, diced in 1/4″ pieces
    • 1 Pound Parmesan Cheese, shredded and divided
    • 8 Ounces Riccota Cheese
    • 1 C. Natural Sour Cream
    • 2 T. Fresh Italian Parsley, chopped
    • 1 C. Panko Bread Crumbs
    • Spaghetti Sauce, recipe follows

    Mark’s Spaghetti Sauce


    • 2 Cans Tomato Sauce(15oz) (or fresh)
    • 2 Cans Fire Roasted Tomatoes, not drained(15oz)
    • 1 Can Tomato Paste(6oz)
    • 1/2 C Red Wine, or beef stock
    • 3 Cloves Garlic, grated
    • 1/4 C Red Onion, grated
    • 3 Bay Leaves
    • 1 tsp Fresh Thyme, minced
    • 1 tsp fresh Oregano, minced
    • 3 tsp Olive Oil
    • 1 1/2 tsp Salt
    • 3/4 tsp Pepper
    • 1/2 tsp Red Pepper Flakes
    • 2 tsp Sugar


    Place the oil, herbs, onion and garlic in a large saucepan over medium high heat, cook for about 3 minutes, then add the wine and cook for 2 minutes. Now reduce the heat to low and add the tomatoes with the juice, the the sauce and paste, stir until very well blended, simmer for 1 hour, stirring occasionally.

    For the Ziti:

    Preheat the oven to 350 degrees and butter and spray a 10×14 baking dish.

    Bring a large stock pot of well salted water to a boil over medium high heat, add the pasta, and cook until al dente, about 8 minutes. Drain well and set aside. Now in an 8qt stock pot heat the olive oil over medium high heat untill it ripples. Add the ground beef and cook stirring often, till crumbled and brown. Drain well and add the onion, garlic salt and pepper and cook, stirring constantly for 4 minutes. pour in 3/4 of the spaghetti sauce, turn heat to low and simmer for 15 minutes. Add the cheeses (1/2 the parmesan), and sour cream and mix very well. Pour this into you pan, top with the remaining sauce, panko, the remaining parmesan and the parsley and place on the middle rack of your oven and bake for 40 minutes, until browned and bubbly.
