Bean and Vegetable Chili
Sauté onion, pepper, and garlic until lightly browned, about 3 minutes. Add beans, tomatoes and seasoning. Bring to a boil, then reduce heat and simmer uncovered for 10 minutes. Stir in corn and zucchini and continue to cook until zucchini is tender (not mushy), about 7 minutes.
