• Bean and Vegetable Chili

    Bean and Vegetable Chili

    Ingredients:

    • 1 medium onion, chopped
    • 1 green pepper, seeded and diced
    • 2 cloves garlic, minced
    • 3 cups (or 2 cans) black beans
    • 2 14.5 oz cans diced tomatoes (or equivalent fresh)
    • 2 t chili powder
    • 1.5 cups corn, fresh or frozen
    • 1.5 cups diced zucchini
    • 1 pre-roasted sweet potato

    Directions:

    Sauté onion, pepper, and garlic until lightly browned, about 3 minutes. Add beans, tomatoes and seasoning. Bring to a boil, then reduce heat and simmer uncovered for 10 minutes. Stir in corn and zucchini and continue to cook until zucchini is tender (not mushy), about 7 minutes.
