    Blackened Salmon Fish Tacos


    • Tortillas
    • 2 tbsp chopped tomato
    • 2 tbsp avocado
    • 2 tbsp black beans
    • 2 tbsp Trader Jo’s corn salsa
    • 1 salmon patty (you can find good frozen ones at Costco)
    • A bit of cabbage drizzled with lime juice
    • Salty’s blackening spice (to taste)
    • Sour cream (optional) everything tastes better with it!


    1. Put a little coconut oil in a cast iron skillet, warm till melted.
    2. Rub your salmon with Salty’s blackening spice.  If you’re cooking the salmon from frozen, sear a bit before seasoning. Cook salmon to your likeness.
    3. While the salmon is cooking combine the corn salsa, tomatoes, avocado and black beans. Slice your cabbage thinly and toss in a bit of lime juice.
    4. Remove salmon from heat and warm your tortillas in the same skillet.
    5. Portion salmon between the two tortillas and then top with salsa, cabbage and sour cream.

    Enjoy! It is so good! Only 11 weight watchers points, too.
