• Blueberry Compote

    I made this thing from our blueberries. It was a blueberry compote served as a kind of parfait. 1/2c water + 1/2c sugar + 2 long lemon peels – boil on stove until sugar melts, about 5min, then remove & discard peels. Add in 2c blueberries, return to stove, simmer until berries split (about 3-5min). Remove from stove, stir in 1.5 teaspoon lemon juice. I layered it on some yogurt, then granola, then compote, a dollop of whipped cream & sliced strawberries. That’s it! Easy-peasy.
