“I pinned a recipe for broccoli quinoa casserole and made it recently, but I didn’t like it because it had mayo in it… I thought I could make it with greek yogurt instead and also take out the can of broccoli cheese soup. I didn’t bake mine in a casserole dish, but you can if you want. I love the flavor that this has.”
Broccoli Cheese and Quinoa Casserole
1 cup quinoa
2 cups chicken broth
1 small diced onion
some steamed broccoli
1 cup of shredded cheddar– about. I just threw a handful in 1 cup of other shredded cheese (I used colby/jack)
2 Tbsp butter
1 Tbsp flour
about 2 tbsp greek yogurt
In a pot, melt a tbsp of butter and add your diced onion. Let the onion cook until transluscent, then throw your quinoa in to toast it a bit. Add the chicken broth and simmer for the recommended time. While you do this, steam your broccoli. In a large pot, make a roux from your flour and butter. Add the greek yogurt, the cheese and a splash of milk. I also added a cube of pureed butternut squash that I keep in the freezer to add to sauces, etc. I would maybe add 2 next time because I like the flavor. Whisk until the cheese is melted. Add salt and pepper to taste. Fluff the quinoa and add it to your cheese, then add the broccoli and stir it up. At this point you can put it in a casserole dish, sprinkle some cheese on top and bake for a few minutes, but I like it just like this.Also, I take terrible pictures of food. I promise this tastes much better than it looks.
