1. Grind the herbs, salt and pepper together with a mortar and pestle.
2. Melt the butter and add the Scotch.
3. Place the chicken in a roasting pan.
4. Stir in the herb mixture and brush over the outside and the inside of the chicken.
5. Roast at 400° for 20 minutes and then lower the temperature to 350° for 30 more minutes, basting occasionally with the pan juices.
