    A big thank you to Katie from our Facebook community for sharing a passed down family recipe for Calico Beans!

    Here is one of our favorite quick, easy, go-to comfort meals. Especially with it getting cooler outside. We serve it with cornbread on the side.

    I’m sure this recipe could be tweaked a ton of different ways…including a meat-free version. I cut the hamburger from 2#, down to 1#. I also use Dijon mustard and apple cider vinegar for more taste/kick.

    This is great for crockpots or make ahead. When cooking in the crockpot, we do the meat the night before {draining as much fat/grease as possible}, then mix everything EXCEPT pork-n-beans in crockpot. Cook on low for however long {I never pay attention – just stir occasionally} – add pork-n-beans last hour before serving. Otherwise, make everything as instructed day before and add a little bit more time to account for food being cold.

    Ingredients:

    • 2 pounds hamburger (or 1 pound)
    • 1 pound bacon
    • 1 large can pork and beans
    • 1 regular can butter beans
    • 1/2 cup brown sugar
    • 1/2 cup ketchup
    • 2 TB vinegar (apple cider or white)

    Directions:

    Cut bacon into 1 inch pieces.  Brown hamburger and bacon together.  Preheat oven to 300 degrees.  In bowl, combine all remaining ingredients.  When meat is done, add to bean mixture.  Put in casserole dish and bake for 1 1/2 hours, covered.
