• Vegan Carrot Cake

    • 1 cup organic whole wheat flour
    • 1 cup organic unbleached white flour
    • 1/4 tsp sea salt
    • 1 Tbsp non-aluminum baking powder
    • 1/2 tsp baking soda
    • 1 tsp ground cinnamon or allspice
    • 1 cup organic seedless raisins
    • 1 1/2 cups grated carrot
    • 1/4 cup organic safflower oil (or your favorite oil to bake with)
    • 3/4 cup Edensoy Vanilla or Extra Vanilla (soy milk or your favorite milk)
    • 1 Tbsp organic apple cider vinegar
    • 1/3 cup organic maple syrup
    • 1/2 cup organic apple sauce


    Preheat the oven to 375°. Mix the flours, sea salt, baking powder, baking soda, raisins, carrots and cinnamon ogether in a mixing bowl. Combine the oil, Edensoy, and vinegar. Mix well and let sit 5 minutes. Combine with the dry ingredients. Add the maple syrup and apple sauce. Stir until the batter is smooth. Lightly oil two 8″ round cake pans or one 9″ x 13″ sheet can pan and lightly dust with a little flour. Pour out the flour from the pan(s). Pour the batter into the pan(s) and bake for 22 to 25 minutes until golden brown. Remove and allow to cool before adding your favorite icing or topping.
