• Cowboy Caviar


    An excellent spin on salsa, cowboy caviar is great served with corn chips, bagel chips, as a veggie side dish, or throw it in a wrap with some leftover grain and call it a meal.


    • 2 cans Shoepeg white corn
    • 2 cans black-eyed peas (without bacon)
    • 2-3 roma tomatoes
    • 2-3 avocados
    • 1/3 cup extra virgin olive oil
    • 1/2 cup red wine vinegar
    • 2-3 garlic cloves (crushed)
    • 1 bundle cilantro
    • 1 bundle green onions
    • 1 tsp. ground cumin
    • salt and pepper to taste


    Mix together in large bowl.  Serve immediately or refrigerate to serve one day later.
