• Egg-Avocado Sandwich

    Life can move pretty fast some days.  That’s why fast food restaurants are so tempting. This gotta-leave-the-house-in-twenty-minutes sandwich will keep you from lining up at the drive thru.  If you have a little more time, try it with the caramelized onions.  Make it for a Meatless Monday meal or a sunny day when heading outside is much more important than staying inside and cooking.

    Ingredients:  (per sandwich) 

    • Toasted bread, either in toaster or grilled cheese style
    • 1 or 2 fried eggs
    • 1 slice of Swiss cheese (melted from the hot bread and egg)
    • Avocado slices
    • Mayo, Healthy Ranch Dressing (recipe soon to come) or your favorite spread
    Try these tasty additions:
    • Sautéed onion slices in a little oil and wine (the wine is divine!)
    • Sautéed mushrooms in a little oil and wine
    • Crispy fried shallots
    • Raw red onions, sliced paper thin
    • Large slice of tomato
    • Basil leaves or cilantro
    • Pesto
