• Enchilada Pie

    Thank you to Haley from our Facebook community for sharing her yummy enchilada pie recipe!
    A great vegetarian base for whatever suits your fancy.
    Enchilada Pie
    • 1 Can Black or Pinto Beans or 1-2/3 cups cooked beans
    • ⅔ cup Corn
    • 1 Chopped Onion
    • 1 Tbsp Chili Powder
    • 1 Clove Garlic (Minced)
    • 1 tsp Cumin
    • 8 Oz. Can Tomato Sauce
    • Tortillas (4 – 5)
    • 1 ½ cups Shredded Cheese
    • ½ cup Water
    • Butter (Optional)
    Saute onion, garlic and spices for a few minutes.

    Stir in beans, corn and sauce. Cook on medium heat a few minutes. 

    Spread each tortilla with butter (optional). 

    In a 2 quart casserole dish, alternate layers of tortillas, bean mixture and cheese. Add water, cover and bake in a 400 degree oven for 20 minutes.

    Variations: add bell peppers, use enchilada sauce, salsa, spice sauce, etc.
