• Grilled Veggie Lasagna

    Grilled Veggie Lasagna
    Ingredients:  
    • no boil lasagna noodles
    • crushed garlic
    • fresh mozzarella
    • ricotta cheese
    • herbs, including basil
    • tomatoes
    • water
    • olive oil
    Directions: 
    Heat your grill to medium. Get some no-boil lasagna noodles, mix crushed garlic with sliced fresh mozzarella, some ricotta and herbs. Slice some tomatoes and salt them. Double layer four pieces of foil. Drizzle olive oil on the middle of the foil, add a tbsp of water to each one, then place a noodle on each. On top of the noodle, add fresh spinach leaves, a layer of tomato slices and a layer of the cheese mixture. Place another noodle, another tbsp of water and repeat the layers. End with a noodle on top, a tbsp of water and a drizzle of olive oil. Do this four times on your four pieces of foil. Fold your foil packets up and crimp the edges, so they seal nicely. Place them on the grill for 20 minutes, turning over half-way through. Make a brushetta wtih tomatoes, olive oil, garlic and basil, and when the lasagna is done, top with ricotta and the brushetta.
