Two thumbs way up for these bad boys. My husband took one bite and declared they were the best Rice Krispie Treats he had ever eaten. They are pretty sweet, so now that I know how easy it is to make these without marshmallows, I’ll be experimenting with Nutella and peanut butter combinations or just peanut butter. I’ll also be trying out different cereals, like with these Flax Bran flakes my toddler actually loves. To make them vegan, just use agave nectar in place of the honey.
1/2 cup Nutella (To make these extra fancy, you can use a more upscale chocolate hazelnut spread. Use Justin’s Nut Butter Natural Chocolate Hazelnut, which blows Nutella away.) (I actually made my own Nutella.)
4 cups Rice Krispies (Again, if you are going the extra fancy route, use Erewhon Crispy Brown Rice Cereal. It’s organic Rice Krispies with no corn syrup.)
In a medium-sized microwave-safe bowl, combine honey and Nutella and microwave for 30 seconds.
Stir. The honey and Nutella should be hot and thoroughly combined. If not, continue to microwave for ten seconds at a time and stir until they are. (If you don’t have a microwave, heat in a medium-sized saucepan on medium heat for five minutes.)
Mix Rice Krispies into the bowl and stir, coating all of the Krispies.
