I’m not sure if I have shared this with all of you before. It is a delicious, oh so easy dessert recipe. For those of you who pay attention to my posts you know that baking is not a strength of mine but this recipe just works! It’s one of those little individual cake recipes that when you cut into them chocolate oozes out. Oh how they make me happy. By the way the recipe is gluten free with the sorghum flour but you can use regular flour if you want.
Lotta Lava Cake:
3 ounces chocolate chips (semisweet or bittersweet)
1 stick butter
1 cup powdered sugar
1/2 cup sorghum flour (or regular flour)
2 large egg yolks
2 large whole eggsSift sugar and flour together, set aside.
Lightly beat eggs and set aside.
Melt chocolate and butter together in a double boiler.
Whisk in egg until just blended.
Whisk in dry ingredients. Mix well.
Pour into 4 greased ramekins. (I used smaller ramekins so sometimes the batter goes a bit further.)
Cook at 500 for 8-12 minutes or until tops crack and ooze chocolate. (Use tall rather than wide ramekins for the best ooze)
I like to make this for times when I am heading over to a friends and bringing dessert. I make it and put it in the ramekins (mine have lids) and then bake them when I get there. If you bake them ahead of time and don’t serve them warm you won’t get the same ooze though they will still taste delicious.
