• MY Meatloaf

    I love meatloaf! It is one of my favorite meals, when it’s my meatloaf. Sorry to brag but unless you have had MY meatloaf you really haven’t had meatloaf. The other day, it was cool outside and I was craving it. That beautiful picture I posted is a cold meatloaf sandwich. Again, if you haven’t had MY cold meatloaf sandwich, you haven’t really had a cold meatloaf sandwich. Here is the recipe.

    MY Meatloaf


    • 2 beaten eggs
    • 3/4 cup milk
    • 2/3 cup dry bread crumbs
    • 1/4 cup finely chopped onion
    • you can add some fresh parsley, I choose not to
    • 1/2 tsp dried sage, basil or oregano
    • 2 lbs ground meat
    • a 14.5oz jar of tomato sauce
    • ketchup, just have the bottle handy
    • 2 tbsp brown sugar
    • 1 tsp dry mustard
    • 3 or 4 smashed allspice berries
    • a handful or so of cubed cheddar cheese
    • a handful or so of chopped black olives
    • a handful or so of chopped green bell pepper


    Preheat the oven to 350 degrees. Throw all of this into a big bowl and using your hands squish it together. Toss it onto a broiler pan and shape it into a long flattish loaf for quicker cooking and douse the top with ketchup. Cook for 2 hours.
