I made a quick, delicious dinner the other night using Trader Jo’s jar Alfredo sauce and wanted to share.
Marinate chicken breast strips in balsamic and tomato vinaigrette and cook them in a cast iron skillet. Remove the chicken from the pan and allow it to rest before roughly chopping. Toss in the cast iron a couple handfuls of fresh spinach and diced tomatoes and cook until spinach is wilted. I used tomato and carrot penne pasta and after it was done boiling I warmed the sauce with it and then added the chicken, spinach and tomatoes. So good!
