• Slow Cooker Stuffed Peppers

    Jennifer from our Facebook community shared this recipe she modified from the cookbook Fresh From the Vegetarian Slow Cooker.

    Slow Cooker Stuffed Peppers

    Approximate Ingredients:

    • 1 cup cooked brown rice
    • 3 red peppers
    • 1 can black beans (rinsed and drained)
    • 1 tub of refrigerated mild salsa
    • 1 can tomato sauce or crushed red tomatoes
    Directions:
    1. Mix rice, salsa and beans together.
    2. Cut stem off of peppers and pull out seeds.
    3. Stuff peppers with rice mixture.
    4. Pour 1 can of either tomato sauce or crushed red tomatoes in the bottom of the crock pot and over the peppers, cook on low for 4 hours.
