Tonight I made something I’m calling St. Patrick’s Day leftover soup with my leftover corned beef and cabbage….. just sauteed some onion and celery in butter, sauteed the chopped up 1/2 cabbage for a bit, then added the leftover corned beef and some water. I threw in some frozen veggies and a box of potato/onion pierogies. Seasoned with some beef base and s&p to taste. Simmered until veggies and pierogies were cooked through. It tasted really good with the cheddar/onion soda biscuits I whipped up to use up my leftover buttermilk.
