• Sweet Potato Quesadilla

    Sweet Potato Quesadilla


    • 1 sweet potato – cooked and mashed
    • 1 handful baby spinach
    • shredded cheese
    • tortillas

    Puree or mash sweet potato and spread with a knife on tortilla.  Cut baby spinach into chiffonades (thin strands) over the top, spread shredded cheese on top of the baby spinach.  Place one more tortilla on top.  Brown in buttery skillet on both sides until nice, melty and slightly crisp.
