Healthy cookies? Not really. But they do have some great ingredients in them. This recipe is courtesy of The America’s Test Kitchen Healthy Family Cookbook. They dry out in a hurry, so make what you need for a day or two and freeze the rest.
Trail Mix Cookies
Mix first 6 dry ingredients. In separate bowl, mix next 4 ingredients. Add dry ingredients to sugar/butter mixture. Add dried fruits, nuts and chocolate chips.
Bake cookies for 12 to 16 minutes. If you have trouble getting them off the cookie sheet, let them cool for about 10 minutes before transferring to a wire rack to cool completely (although I had no trouble).
