• Triple Berry Muffins

    A great big thank you to Carrie from our Facebook community for sharing these delicious muffins with us!

    I tried this out this morning and it came out alright! Found the recipe in a discussion forum on a calorie counting website and I modified a little.

    Triple Berry Muffins 

    • 2 cups sifted self raising flour (you can google how much baking powder & salt to add to reg flour if you don’t have this)
    • 1/4 cup brown sugar
    • 1 cup frozen berries (I used a triple berry mix, but any will do!)
    • 2 eggs
    • 2/3 cup unsweetened apple sauce
    • 1/4 cup milk


    Mix sugar, milk, eggs and apple sauce together – add to flour
    Gently fold in berries.
    Divide into 10 large muffins in muffin tin
    Bake at 325 for 20ish minutes

    133 calories each if using 2% milk. The recipe I used said 320 degrees for 15 minutes, but I did 325 and it definitely needed longer than 15 to get golden brown on top. Maybe 350 would work better?
